CHARACTERISTICS, PROPERTIES AND BENEFITS OF THE ARTICHOKE THROUGHOUT HISTORY
The artichoke or Cynara cardunculus var. scolymus is a perennial herb in the Asteraceae family that does not grow in the wild. The straight, thick stems are about 1m high and bear very large pale green leaves. The flowers are purplish and appear from June to September.
The artichoke is the result of crossings and improvements of a wild cardoon from the Mediterranean basin.
A LITTLE HISTORY (THE ARTICHOKE, ITS PROPERTIES AND USES)…
Already known to the Greeks and Romans, the artichoke was used to purify the body and mind. It was indeed recognized for its effectiveness in the treatment of many ailments.
The Egyptians and Arabs were already using it. Arriving in France and Italy in the 15th century, the artichoke would later be considered a noble food, particularly because it was very appreciated by Catherine de Medici and then by Louis XIV.
